These suggestions were sent in by Audie:
-Short grain brown rice has a closer texture to white rice I think. I use vegetable broth (bought, usually with by the chicken broth) to make a large amount and put it in the fridge for something quick to add to meals.
-I found canned red beans, "Blue Runner, New Orleans Red Beans Spicy Cream Style" GREAT over the rice:)
-I stir fry cabbage, carrots, broc, squash, zucchini, onions, bell pepper. I put some olive oil in a large skillet and fry the veggies until they start to wilt, then add some soy sauce (some brands have sugar) and stir fry some more. GREAT over the rice:)
-I buy 2 or 3 kinds of can beans, black, pinto etc (check labels), I mix them together and heat with taco seasoning (check labels) and eat in place of taco meat with wheat tortillas, lettuce, tomatos, salsa, and soy sour cream (healthfood section). This one is easy because I can make taco meat also for the kiddos. Refried beans (check labels) also is a good addition.
-pasta- whole wheat penne pasta, "Mezzetta Napa Valley Bristo Rosted Garlic" pasta sauce (Walmart spaghetti sauce section, any will do if check labels) can black olives, frozen spinach. Cook pasta, drain, add sauce, add black olives, add spinach (just enough to give the dish some color) You could also add sauteed onions and peppers, garlic whatever you like
-oatmeal- i buy whole oats and put some in a bowl with apple juice and pop it in the microwave for 1-3 min depending on how "mushy" you want it.... then add
-----apple sauce and chopped peaches
-----apple sauce, cinnamon and vanilla
-----apple sauce and raisins
-----apple sauce, bananas and pecans (my favorite but the pecans need to go into the microwave with the oats)
