Fajita Soft Taco

Oh, my! The fajita taco is the bomb!

Stir fry:
1 clove garlic
1 bell pepper (sliced)
1-2 onions (sliced in rings)
1 tomato
Handful of cut up mushrooms (optional)

Broil:
1 can asparagus -sprinkle with season salt & a little bit of the taco seasoning
Broil for about 20 minutes (stir after 10 minutes)
(If you want crunchy asparagus, get fresh from the produce.)

Once the stir fry is ready (to your liking whether crunchy bell pepper or carmelized), add taco seasoning.

Once the asparagus is ready, add to the stir fry.

Serve on a wheat tortilla. You can add lettuce, tomatoes, jalepenos, and salsa to complete your Fajita Taco.

Creole Seasoning

Do you like food HOT??

Creole Seasoning

2 TBSP Paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
1/2 tsp pepper
1/2 tsp thyme
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp cayenne pepper

This is extremely hot. You could reduce the cayenne pepper and paprika if you want it less hot. The other flavors taste great together.

I made red beans and rice with sautéed green pepper, onion, and celery. Add it all together and put in the seasoning for a great dish.

To be honest, I had to strain my beans and rice mixture it was so hot! Lol!

These suggestions were sent in by Audie:
-Short grain brown rice has a closer texture to white rice I think. I use vegetable broth (bought, usually with by the chicken broth) to make a large amount and put it in the fridge for something quick to add to meals.
-I found canned red beans, "Blue Runner, New Orleans Red Beans Spicy Cream Style" GREAT over the rice:)
-I stir fry cabbage, carrots, broc, squash, zucchini, onions, bell pepper. I put some olive oil in a large skillet and fry the veggies until they start to wilt, then add some soy sauce (some brands have sugar) and stir fry some more. GREAT over the rice:)
-I buy 2 or 3 kinds of can beans, black, pinto etc (check labels), I mix them together and heat with taco seasoning (check labels) and eat in place of taco meat with wheat tortillas, lettuce, tomatos, salsa, and soy sour cream (healthfood section). This one is easy because I can make taco meat also for the kiddos. Refried beans (check labels) also is a good addition.
-pasta- whole wheat penne pasta, "Mezzetta Napa Valley Bristo Rosted Garlic" pasta sauce (Walmart spaghetti sauce section, any will do if check labels) can black olives, frozen spinach. Cook pasta, drain, add sauce, add black olives, add spinach (just enough to give the dish some color) You could also add sauteed onions and peppers, garlic whatever you like
-oatmeal- i buy whole oats and put some in a bowl with apple juice and pop it in the microwave for 1-3 min depending on how "mushy" you want it.... then add
-----apple sauce and chopped peaches
-----apple sauce, cinnamon and vanilla
-----apple sauce and raisins
-----apple sauce, bananas and pecans (my favorite but the pecans need to go into the microwave with the oats)
*almond milk, soy, or rice milk can be added for a more creamy texture and more flavor. (check labels.

Communion Bread

I've had some ask me about the communion bread. Below is the recipe.


Altar Bread Recipe

4 cups whole wheat flour
4 tsp. double-acting, or 8 tsp. single-acting baking powder
2 tsp. salt
1/2 cup pure oil (we used extra virgin olive oil)
Honeyed water - 1/2 cup each honey, milk, water. (I used soy milk.)

Sift the dry ingredients together into a bowl. Then pour in the honeyed water. You may have to warm the honey to get it into liquid form. Be sure to mix the oil with the honeyed water before pouring it into the bowl. Do not pour all the honeyed water into the mixture, only as much as is needed to make a smooth, soft dough, not too sticky to handle. Turn the dough out onto a lightly floured surface and kneed it gently. Then roll out the dough to the desired thickness. We find that about 3/16 of an inch works well for us. Then cut the dough into the desired size and shape. Use a metal soup bowl which measures about six inches across.

Before putting into the oven, we cut a cross into the surface of the dough. This facilitates the breaking of the bread.  The cross is best cut by a knife having a serrated edge. Use the knife also to smooth out the outer edge, by patting it with the side of the knife. Place the breads (this batch easily makes 9 pieces) onto slightly greased baking pans or baker's stone, and put into the oven at about 400 degrees. It should take from 10 to 15 minutes to bake. Let the bread cool for about 1 hour.

Then wrap individual pieces into cellophane, and refrigerate. Take it out about 1 hour before using. They can be put into freezer bags and stored in the freezer, taking out the amount which will be used the night beforehand.

Dressing for Salads to Try

BASIC OIL AND VINEGAR DRESSING:

1/2 c. olive oil
1/3 c. vinegars (mixed) or lemon juice
1/2 c. water
1 T. garlic powder
1/2 tsp. salt
1/8 tsp. pepper

(My mix was White Wine Vinegar and White Vinegar. )

(After the fast, you can add 2 T. brown sugar for a great “go‐to” dressing).

STRAWBERRY BALSAMIC VINAIGRETTE:

This “recipe”, so to speak, isn’t precise with measurements. And I apologize to those who require those parameters. Do your best with these suggestions.

1 pint of strawberries, washed and hulled
Balsamic vinegar (probably about 1TBSP)
Good quality olive oil (maybe about 1/2 cup or so)
Sea salt and fresh ground pepper

As you wash your berries, keep an eye out for the inevitably softer, slightly mushy berries. Set these aside, as their sharper, wine-y taste make them perfect for your vinaigrette.

I puréed my strawberries. You don't want a strong strawberry taste.

Now that I am working, I am searching for things to cook that aren't hard to do. Last year on our Daniel Fast, I cooked everything, looked at every label and did not use it even if it had the Item in the Can that keeps the color.

Wheat Tortillas

One thing we like is Wheat Tortillas with Peanut Butter warmed up in the microwave. I love Peanut Butter and Banana smashed together and that is good on a Wheat Tortilla for breakfast or like a sandwich. Bake some apples in the oven with cinnamon and then put in a wheat tortilla for an apple pie.

Use my recipe below and bake in the oven for some wheat chips. Great with salsa.
